We love these subtly spiced buttery cookies, traditionally made just with vanilla. The Zesty Speculaas in the dough and powdered sugar give it a deliciously warming taste.

For the cookie dough:

  • 2 cups all-purpose flour

  • 1 pinch of salt

  • 2 sticks unsalted cold butter, cut into small cubes

  • 3/4 cup powdered sugar

  • 3/4 cup ground almonds or hazelnuts or walnuts

  • 1/2 tsp vanilla extract

  • 2 tsp Zesty Speculaas spice

For the sugar mixture:

  • 3/4 cup powdered sugar 

  • 1 tsp Zesty Speculaas spice

METHOD:

  • In the bowl of a mixer fitted with the paddle attachment, combine flour, salt, cold cubed butter, powdered sugar, nuts, vanilla extract and Zesty Speculaas spice. Mix at medium speed until a crumbly dough forms, about 1-2 minutes.

  • Use your hands to press the dough together and wrap it in plastic wrap. Chill for one hour in the fridge.

  • Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper.

  • Roll out the chilled dough and use the cutter of your choice to cut the cookies. Transfer them to the baking sheet. Refrigerate the dough if it gets too soft.

  • Bake the cookies for 12 to 15 min, until the edges are golden.

  • Combine powdered sugar with the Zesty Speculaas spice and sift the mixture over the cookies. Let them cool completely then give them a second dusting.
