Curried Shrimp with Peppers and Tomatoes
SERVES 4
INGREDIENTS:
1 lb shrimp, peeled and deveined
1 ½ tbsp Spice Tree Organics NYC Halal Cart Chicken Spice
Medium red onion, chopped in large pieces
½ large green or red pepper, chopped in large pieces
Large tomato, chopped
2 tbs oil
Salt to taste
DIRECTIONS:
Heat oil in a skillet. Add chopped onion and peppers. Saute for four minutes. Add tomatoes and cook for two more minutes. Add spices and mix. Add shrimp and saute until shrimp is cooked through.
Serve alongside rice.
