Growing up in a Middle Eastern home, kofta was a staple that filled the void of meatballs, sausages, and hamburgers. We'd have it in tomato sauce, in sandwiches with tahini, or plain on the grill. Damascus Kofta recreates the flavors of this versatile classic.
1 lb ground beef
1 tbsp + 2 ¼ tsp Spice Tree Organics Damascus Kofta spice
¼ cup finely chopped or grated onion (juices drained)
3 tbsp finely chopped fresh parsley
Salt to taste (we like 1 tsp)
Combine all ingredients in a bowl. Thoroughly mix all the spices, onion, and parsley into the meat. Chill meat mixture for one hour.
Preheat broiler or grill. Depending on the size of kofta you prefer, divide the meat mixture into6 or 8 portions. Using a skewer or butter knife, mold the kofta around the skewer into a long sausage shape. If butter knife was used, carefully pull the kofta off of the knife with ruining shape. Place koftas onto hot broiler pan or grill. Cook for approximately 5 to 8 minutes until browned on surface. Turn kofta and cook an additional 4 minutes until cooked through.
Enjoy in a sandwich using pita bread with shredded lettuce, sliced tomatoes and onion, pickles, and drizzled with tahini sauce.
